Double Chocolate Mint Chip Cookies


1 (10 oz) pkg. Nestle mint flavored semi-sweet chocolate chips
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. butter, softened
1/2 c. brown sugar
1/4 c. white sugar
1/2 tsp. vanilla extract
1 egg
1/2 c. chopped nuts

Preheat oven to 375 degrees. Melt 3/4 c. chocolate chips over a low flame, stir until smooth. Set aside to cool. Combine flour, baking soda, and salt. In a separate bowl, combine butter with both sugars and vanilla extract. Mix until creamy. Add melted chocolate and egg; beat well. Gradually stir in flour mixture. Stir in remaining chocolate chips and nuts. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake for 8 - 9 minutes. Cool completely.
