Persimmon Cookies 2


2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. salt
1/2 c. vegetable shortening
1 1/2 c. sugar
1 large egg
1 persimmon, peeled and pureed

Preheat oven to 350 degrees. Combine the flour, baking powder, baking soda, spices and salt. In a large bowl, combine the shortening and sugar. Beat in the egg. Beat in the persimmon puree. Gradually blend in the dry ingredients. Drop the dough by spoonfuls onto ungreased baking sheets. Bake 10-12 min., until lightly colored. Transfer to wire racks to cool.

Yield: 4-5 dozen
