Ricotta Cookies 2
2 sticks margarine (not butter)
4 cups flour
2 cups sugar
1 tsp. baking soda
1 tsp. baking powder
2 eggs
1 lb. whole-milk ricotta cheese
2 tsp. vanilla
Frosting
1 lb. powdered sugar
1 tablespoon butter, softened
2 to 5 tablespoon milk
1 tablespoon vanilla
Makes about 100
Cream margarine and sugar together. Add eggs, one at a time, and beat well. Add ricotta and vanilla and mix. flour, baking soda and baking powder together. Add gradually to ricotta mixture. Drop by tsp. onto ungreased cookie sheets. Bake at 350º for 10 to 12 minutes (they do not brown)
Frosting
Mix until spreadable. Tint if desired and frost cookies. Shake on sprinkles for a festive, kid-pleasing look.
