Sesame Thins


Makes 8 or (16 doz) small cookies

2 cups (4 cups) Sifted flour
1/2 tsp (1 tsp) Baking soda
1/2 tsp (1 tsp) salt
1 cup (2 cup) butter
1 cup (2 cup) sugar
1 (2) egg
1 tsp (2 tsp) vanilla
4 oz. (8 oz) sesame seeds

Preheat oven to 350 F. Sift flour, soda and salt, mix well. Cream butter and sugar until fluffy, beat in egg and vanilla. Stir in flour mixture, half at a time, blending well to make a soft dough. Knead with hands, wrap in plastic, and chill several hours. (I usually chill for only a few minutes and they still turn out well) Roll dough a teaspoon at a time into small balls, then roll in sesame seeds (in a bowl) to coat lightly. Place 2andquot; apart on lightly greased cookie sheets. Bake 350 F 10 min until delicately golden. Cool on wire rack.
