Cornbread 2


1 egg
1 cup milk
1/4 cup plain flour
1 1/4 cups cornmeal
2 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
3 tablespoons margarine (about 80g if you must weigh it)

Heat oven to 200C. Generously butter square pan, 9x9x2 inch (25cm x 25cm x 5cm). Heat in oven while preparing batter. Beat egg with flour, then add remaining ingredients. Beat just until smooth. Pour batter into hot pan. Bake 20-25mins or until golden brown and set. Serve piping hot with butter. Cut into squares to serve.

Cornmeal may also be called coarse polenta in the UK.
