Knox Dainties


5 envelopes Knox unflavored gelatine
2 cups cold water
4 cups sugar
1/4 tsp salt
Suggested Extracts *
Food coloring (optional)
Powdered sugar or super fine granulated sugar

* SUGGESTED EXTRACTS: Use 2 tsp lemon or coconut extract; or 1/2 tsp peppermint or strawberry extract

In a large saucepan, sprinkle unflavored gelatine over cold water; let stand 1 minute. Stir over low heat until genatine is completely dissolved, about 5 minutes. Stir in sugar and salt. Boil, stirring frequently, 15 minutes. Evenly divide mixture into two 9 x 5 x 3 loaf pans. Into each pan, stir one Suggested Extract and food coloring. Let stand, covered, at room temperature, at least 12 hours.

Heavily dust cutting board with powdered sugar. With tip of wet sharp knife, loosen gel from sides of pan; pull out onto cutting board. Cut into 1 inch squares and roll in additional sugar.

Makes about 7 dozen.
