Lemon Crumbles
FILLING
1 cup sugar
2 tablespoon flour
1/8 tsp. salt
1 cup water
1 egg
1/4 cup lemon juice
1 tablespoon grated lemon rind
1 tablespoon butter or margarine
TOPPING
3/4 cup Flour
2 tsp. baking powder
1/4 tsp. salt
3/4 cup butter or margarine
1-3/4 cups finely crushed soda crackers
1/2 cup sugar
1-1/2 cups coconut
To Make Filling:
Mix sugar, flour and salt in saucepan. Stir in water. Add beaten egg. Stirring constantly, cook over low heat until thickened and smooth. Remove from heat. Blend in lemon juice, rind and butter. Cool.
To Prepare Topping:
Preheat oven to 350 deg. F. Sift then measure flour; resift with baking powder and salt. Cut in butter to form fine crumbs. Blend in crackers, sugar and coconut (mixture will be crumbly). Press half crumb mixture in bottom of buttered nine by nine by two-inch pan. Spread with filling. Top with remaining crumb mixture. Press firmly into filling. Bake 35 to 40 minutes or until set and light brown in color. Cool in pan on cake rack. Cut into tiny squares.
