Apple and Plum Slump


450 g eating apples; peeled, cored and sliced
450 g plums; halved and stoned
50 g light brown sugar
pinch salt
pinch nutmeg
pinch cinnamon
200 g plain flour
2 teaspoons baking powder
75 g sugar
1 egg; beaten
100 ml milk
75 g melted butter; cooled
whipped cream; to serve

Yield: 6-8 servings

Mix together fruit, brown sugar, salt and spices. Place in a large ovenproof dish. Bake at 180 C / 350 F / Gas 4 for 20 minutes. Sift together flour, baking powder and sugar. Whisk together egg, milk and melted butter. Add to dry ingredients and stir until just mixed. Spread over the fruit and return to the oven for a further 30 minutes or until golden and cooked. Serve with whipped cream.
