Cranberry Apple Cobbler 3
1-1/2 cup fresh or frozen cranberries
5 cups sliced (1/4 inch thick) tart apples
1/4 cup + 1 TSP sugar (or more to taste)
1/2 TSP cinnamon
1 cup reduced fat biscuit mix
3/4 cup buttermilk
1 TSP grated orange rind
Dash nutmeg
1/4 TSP cinnamon
PREHEAT OVEN TO 375 deg F.
In a large bowl, combine cranberries, apples, 1/4 cup sugar, and cinnamon. Spoon into an 8x8 inch baking dish. Bake for 20 minutes until fruit is almost tender.
In a small bowl, combine biscuit mix, milk, orange rind, and nutmeg. Spoon over fruit mixture by the tablespoon full. Mix 1 TSP sugar with cinnamon and sprinkle over mixture.
Bake 15 minutes or until golden brown. Serve with nonfat frozen vanilla yogurt or ice cream, if desired.
