Dumplings and Cocky's Joy (Caramel Sauce)
1 1/2 cups self raising flour
2 tablespoon castor sugar
60g (4tbsp) butter (melted)
1 egg (lightly beaten)
1/4 cup milk
1 1/3 cups water
1/3 cup golden syrup (treacle)
1/2 cup soft brown sugar
1/2tsp lemon juice
60g butter (extra)
Sift flour into a mixing bowl, add sugar and stir until combined. Make a well in the centre. Combine butter, egg and milk, and add to the dry ingredients. Using a knife, stir until just combined. Mix together, water, syrup, juice and extra butter in a large saucepan, stir over high heat until sugar has dissolved, bring to the boil. Carefully drop heaped tablespoonfuls of dumpling mix into the sauce. Reduce heat to low and cook for 10 minutes (or till dumplings have risen and cooked through). Ladle the syrup over the dumplings occasionally during cooking.
Serves 4 (whipped cream and or ice cream go really well with this dessert)
