Low Fat Cherry Peach Cobbler


3/4 lb pitted cherries or one 12-oz bag frozen cherries
2 peaches, peeled and sliced
2 tablespoon lemon juice
3/4 tsp ground cinnamon
2 tablespoon quick-cooking tapioca
1 tsp vanilla extract
3/4 cup sugar

Crust
1 3/4 cups all purpose unbleached flour
1 1/2 tsp baking powder
3/4 tsp salt
2 tablespoon sugar
2 tablespoon reduced-fat margarine
2/3 cup non-fat milk

Mix ingredients together and place in a nonstick 8-inch-square pan. Prepare crust.

Crust
Preheat oven to 425 degrees. Stir dry ingredients together. Add margarine and mix until it is crumbled. Stir in milk until the mixture forms a ball. Knead 6 times. Roll out to a thickness of 1/2 inch. Using a biscuit cutter, cut dough into 8 biscuits. Place biscuits over filling and bake about 35 minutes, until golden.
