Low Fat Chocolate Chip Mint Parfaits


Makes 6 servings

1 (11 1/4-ounce) package ROYAL No-Bake Cheesecake
1/3 cup margarine or butter, melted
3 tablespoons sugar
1 1/2 cups cold milk
1 teaspoon peppermint extract
4 drops green food coloring, optional
1/2 cup miniature or regular semisweet chocolate chips
2 1/2 cups prepared whipped topping, divided
6 assorted color starlight candies

Mix graham cracker crumbs, margarine or butter and sugar; set aside.

Prepare cheesecake according to package directions using milk, mint extract and food coloring if desired. Stir in chips; set aside.

Reserve 1 tablespoon crumb mixture for garnish. In 6 (8-ounce) parfait or water glasses, layer half the cheesecake filling, remaining crumb mixture and 2 cups whipped topping; top with remaining cheesecake filling. Refrigerate 1 hour.

Garnish with remaining 1/2 cup whipped topping, reserved crumbs and candies.

Nutrition Information per serving: 596 calories, 10 g protein, 80 g carbohydrate, 26 g total fat, 10 g saturated fat, 17 mg cholesterol, 509 mg sodium
