Muskoka Blueberry Buckle


3/4 cup white sugar
1/2 cup vegetable shortening
1 egg
2 cups flour, all-purpose, sifted
2 1/2 tsp baking powder
3/4 (+) cup milk
2 cups blueberries

Topping
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 cup butter
1/2 cup flour

Frozen berries work well, as well as other fruits, and mixed fruits are fun too.

Beat sugar and shortening together, mixing well. Add egg, and mix well. Mix dry ingredients together, and add to sugar mixture, alternating with milk. batter should be a bit heavier than for a cake. Pour into 8 inch greased springform pan, topping with blueberries. Mix topping ingredients together, till it "balls up". Add 1/3 cup quick-oats if desired. Using your fingers, crumble over blueberries, covering well. Bake in preheated 350F oven, 50 - 60 minutes. Cool for 1 hour before serving.
