Plum and Pear Cobbler


450 g plums; stoned and quartered
450 g pears; peeled, cored and sliced
75 g light muscovado sugar
1/2 teaspoon grated nutmeg
1/2 teaspoon ground cinnamon
50 g butter
225 g self raising flour
25 g caster sugar
90 ml milk; + extra to glaze

Yield: 4 servings

Pre-heat oven to 200 C / 400 F / Gas 6. Place plums, pears, muscovado sugar and spices in a saucepan. Simmer gently, stirring occasionally, for 10 minutes until pears are tender. Place mixture in an oven-proof dish. Rub together the butter and flour. Stir in caster sugar, slowly add milk to give a soft dough. Roll out to 1 cm thickness and make cobblers by cutting into rounds with a biscuit cutter. Arrange cobblers around the edge of the dish. Brush with milk and bake for 15-20 minutes, or until golden.
