Low Fat Hazelnut Bleu Cheese Dressing


Makes 8 servings

1/4 cup buttermilk
1/2 cup liquid egg substitute
2 teaspoons white wine vinegar
1 clove garlic
1/2 teaspoon salt
1/16 teaspoon black pepper, coarsely ground
1 dash cayenne pepper
1 1/2 cups apple juice
1/4 cup low fat blue cheese, crumbled
1/4 cup hazelnuts, toasted and chopped
1/8 teaspoon parsley, chopped
1/4 teaspoon lemon rind, grated
1 tablespoon olive oil

Combine buttermilk, eggs, vinegar, garlic, salt and both peppers in a blender or mixer bowl. Blend until well mixed, then slowly add olive oil. Once emulsified and creamy, reduce speed to low and add bleu cheese, hazelnuts, parsley and lemon rind. When thoroughly mixed, dressing is ready to serve. Refrigerate any unused dressing.
