Poppy Seed Dressing

1 cup granulated sugar
1 teaspoon dry mustard
1/2 teaspoon salt
1 1/2 teaspoon paprika
1/2 cup apple cider vinegar
1 1/2 cups vegetable oil
1 teaspoon grated onion
2 tablespoon poppy seeds (I leave the seeds out) optional

With an electric mixer, mix sugar, mustard, salt, paprika and vinegar on low until the sugar melts (this takes about 10 minutes). Gradually add the oil beating constantly and continue to beat with the mixer until thickened. Add the onion and the poppy seeds if using-beat a few more minutes. Store in the refrigerator in a glass jar. Makes about 2 or so cups of dressing. This is good on a spinach salad.
