Neapolitan Mince Rolls


10 cabbage leaves
1 lb mince
1 beaten egg
1 large onion, chopped
1/2 cup uncooked rice
2 tablespoon chopped parsley
1 tablespoon chopped mint
2 tsp oil
1/4 cup water
1/2 tsp salt
2 1/2 cups hot water
2 tsp powdered chicken stock

Dip cabbage leaves in boiling water until they wilt. Cut off part of the thick rib on each leaf if necessary, so that leaves will be more flexible. Mix together mince, beaten egg, onion, rice, parsley, mint, oil, 1/4 cup water and salt and pepper, Put a spoonful of mixture on each leaf and roll up, folding ends in to seal in the meat. Arrange folded side down in frypan. Add hot water and chicken stock. Cover and simmer 40 minutes. Serve with mashed potatoes, green beans and mashed carrots.
