Fresh Prickly Pear
To prepare prickly pears. wash to remove spines, cut off top and bottom, slit side from end to end, peel off inner and outer skins in one operation. The prickly pear fruits must be rather larger than the ones I have seen (about the size of a large egg), one pear will serve two people.
Slice large pieces of the peeled fruit into a dessert dish. Top with whipped cream. Serve with a lime wedge for each person. Squeeze lime juice on as you eat.
