Grilled Figs with Goat Cheese


serves 6

8 oz goat cheese
2 tsp finely chopped rosemary
salt and pepper
24 fresh figs
1/4 lb sliced prosciutto
6 long sprigs rosemary
olive oil

Combine cheese, rosemary, salt and pepper. Make a small slit in bottom or side of each fig and pipe or stuff cheese mix into figs. Wrap strips of prosciutto around each fig and skewer 4 figs per rosemary twig. Brush with oil. Place figs on a hot grill and grill until cheese starts to ooze, about 6 minutes.
