Three Cheese Grits

Yield: 4 servings

2 cup Water
1/2 cup Enriched Hominy Quick Grits* (Quaker or Aunt Jemima)
1/4 tsp Salt (optional)
2 oz Shredded Swiss cheese
2 oz Shredded cheddar cheese
1/4 cup Grated Parmesan cheese
2 tablespoon Margarine or butter
1 Egg; beaten
1 small Garlic clove; minced
1/2 tsp Worcestershire sauce

Heat oven to 350 F. Grease 1-qt. casserole. Bring water to a boil; slowly stir in grits and salt. Return to boil; reduce heat. Simmer 2 to 3 minutes or until thickened, stirring occasionally. Add cheeses and margarine; stir until melted. Stir in remaining ingredients. Pour into casserole. Bake 30 to 35 minutes or until knife inserted in center comes out clean.

To substitute regular Quaker or Aunt Jemima Enriched Hominy Grits, increase water to 2-1/2 cups and simmer time to 12 to 14 minutes or until thickened, stirring occasionally. Proceed as recipe directs.
