Makes 8 Servings
Vegetable cooking spray
2 lbs ground turkey
1 can (4 oz.) chopped green chilies, drained
1 cup Chopped onion
1 pckge (1-1/4 ounces) taco seasoning mix
8 Flour (8-inch) tortillas
1 can (16 ounces) non-fat refried beans
Lettuce shredded
1/2 cup Non-fat Cheddar cheese grated and divided
Salsa, optional
Spray cold grill rack with vegetable cooking spray. Preheat charcoal grill for direct-heat method cooking.
In medium bowl combine turkey, chilies, onion and seasoning mix. Evenly divide turkey mixture into 8 (9x2-inch) rectangular-shaped burgers.
Grill burgers 3 to 4 minutes, turn and continue cooking 2 to 3 minutes or until 160 degrees F. is reached on meat thermometer and meat is no longer pink in center.
Remove and keep warm.
Heat tortillas according to package directions. Spread each tortilla with 1/4 cup refried beans and sprinkle with lettuce.
Place burgers in center of each tortilla and sprinkle 1 tablespoon of cheese over top. Fold sides of tortilla over burger to create a burrito. Serve with salsa.
