New York Burger

This style of burger was made famous at New York's 21 Club.
Serves 4.
4 tablespoons butter
1 teaspoon basil
1/2 teaspoon thyme
1 1/2 tablespoon parsley, chopped
2 pounds ground chuck
Salt and pepper
8 tomato slices
4 red onion slices
Large Italian-style bread, sliced 1/2-inch thick.
Soften the butter. Blend in the herbs. Roll into a log. Wrap in parchment paper or plastic wrap and freeze.
Form the meat into 4 balls. Cut the butter into 4 pieces. Place a piece into each burger and form 1-inch thick patties. Season and grill to the desired temperature. Lightly oil the bread slices and grill. Serve the burgers on the bread topped with the tomatoes and onions.
