Drying Herbs
Drying is a simple, practical way of preserving herbs. Cut the herbs with stems attached. Do not wash the herbs before drying unless they are very dusty. If you have to do this, dry well with a paper towel. The easiest method is to tie the bunch of herbs around the stems with a string and hang it, upside down, in an airy place for 4 or 5 days or until the herbs are dry. Place a paper bag over the bunch and shake the herbs into it. Discard the stems. Store in a dark, cool place and use as needed.
