Chocolate Ice Cream
4 ounces bitter chocolate
1 cup sugar
1 tablespoon flour
1/4 teaspoon salt
3 eggs
3 cups milk
1 1/2 tablespoons vanilla extract
3 cups heavy cream
In top of double boiler, melt chocolate. Add sugar, flour and salt to the melted chocolate. beat eggs with rotary beater and add beaten eggs to chocolate mixture, stirring vigorously. Heat milk to a boil and add to chocolate mixture. Cook, stirring occasionally, until mixture thickens. Cool. Add vanilla and heavy cream to the cooled mixture. Churn-freeze.
