Dilled Onion Compote


Yield: 72 servings

2 cups chopped red onion
1/4 cup fresh lemon juice
1/4 cup water
2 tablespoons sugar
1/2 teaspoon salt
1/3 cup low-fat sour cream
3 tablespoons minced fresh dill

Combine onion, lemon juice, water, sugar and salt in a zip-top heavy-duty plastic bag, and seal; shake to coat. Marinate in refrigerator 8 hours, turning bag occasionally. Drain onion, and rinse under cold water; drain well. Combine onion, sour cream, and dill in a bowl, and stir well. Store in an airtight container in refrigerator up to 3 days.

Yield: 1-1/2 cups (serving size: 1 teaspoon).
