Cookie Pizza


This is a great idea for cooking along with your kids or taking to a kids party. You make the cookie dough while the kids prepare the toppings!

1/2 Cup Butter or Margarine, room temp
3/4 Cup Packed Brown Sugar
1 Egg
1 tsp Vanilla extract
3/4 Cup Flour
Pinch salt
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1 Cup Rolled Oats
1/2 Cup flaked or shredded Coconut

Toppings:
1 Cup Semisweet or Milk Chocolate Pieces
1/2 Cup chopped Walnuts or Pecans
1/2 Cup Yellow-tinted (with food coloring) Coconut ("pizza cheese")
1/2 Cup Colored candy-coated chocolate and/or peanut butter pieces

Preheat oven to 350F. Grease a 12-inch pizza pan. In a medium bowl, beat together butter or margarine, brown sugar, egg and vanilla until light and fluffy. Add flour, salt, baking powder, baking soda and oats, beating until blended. Stir in plain coconut. Spread dough evenly in greased pizza pan. Sprinkle with chocolate pieces, walnuts, and yellow coconut. Bake 13 to 15 minutes or until golden brown. Cool in pan. Garnish with candy pieces. Cut cooled cookie pieces into wedges.

Makes about 12 cookie wedges.
