Banana Liqueur
1 med ripe bananas
1 vodka
1 cup sugar syrup
3/4 tsp vanilla extract
Peel and mash the banana; put it in a large jar. Add the vodka, making sure that the banana is completely covered. Tightly close the jar and let steep for one week. Pour the contents through a wire strainer to remove most of the banana; add the sugar syrup. Strain the solution through cheesecloth a couple of times so that the remaining small particles of banana are removed and the cloudiness has disappeared. Add the vanilla, shake well and enjoy.
