Low Fat Achiote Marinade
Serving Size : 8
1/4 cup anchiote paste, * see note
2 cup orange juice
1 tsp garlic, chopped
1 tablespoon olive oil
1 tablespoon brown sugar
1 pinch ground cumin
1 pinch ground coriander
1 pinch oregano
salt and pepper, to taste
*NOTE:
May be purchased at Mexican specialty products stores or in the Mexican food section of some groceries. Mix the marinade ingredients together. Marinate chicken, pork, fish, or seafood from 3 hours to overnight.
