Cornbread Sausage Apple Pie

apple pie recipe
1 lb bulk pork sausage
1 tbs olive oil
1 3/4 cups cornbread mix
1 egg, beaten
1 1/2 cups buttermilk
1 can (21oz) apple pie filling
1 tbs sugar
1/8 teaspoon ground cinnamon

Cook sausage over medium heat until browned, stirring to crumble; drain well and set aside. Place oil in cast iron 10-inch skillet; heat at 400 degrees F. or until very hot. Combine cornbread mix, egg, and buttermilk in a large mixing bowl; stir until smooth. Stir in sausage. Pour mixture into heated skillet; bake at 400 degrees F. for 25 to 30 minutes. Place pie filling, sugar, and cinnamon in a small saucepan; cook over low heat, stirring constantly, until thoroughly heated. Spread over cornbread. Serve hot.

Serves 8.
