All White Meatloaf
1 pound ground veal
1 pound ground turkey
1/2 pound French or sourdough bread made into crumbs
2 egg whites
1/2 cup skim milk
5 large cloves garlic, minced
1 small onion, diced
2 ribs celery, diced
1 teaspoon salt
1 teaspoon poultry seasoning
3/4 teaspoon nutmeg
3/4 teaspoon pepper
GLAZE:
2 tablespoons honey
1 tablespoon Dijon-style mustard
1 tablespoon sesame seeds
Preheat oven to 250 degrees (generally, meat loaf recipes call for 350 degrees but this one calls for 250 degrees).
Combine meats, bread, egg whites, milk, garlic, onion, celery, salt, poultry seasoning, nutmeg and pepper in a large bowl. Process in batches in a food processor until mixture is very smooth.
Spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray and line with waxed paper. Press meat mixture into pan, In a small bowl combine honey, mustard and sesame seeds. Spread mixture over meat in pan. Bake 1 1/2 hours or until no pink remains. Slice and serve.
Makes 6 servings.
