Hoosier Meatloaf


1 lb Ground chuck
1 lb Ground pork
2 cup Oatmeal, raw
2 Eggs, beaten
2 tablespoon Beef granules
1 teaspoon Allspice
1 teaspoon Pepper
1/4 teaspoon Thyme
1/2 cup Onion, minced
1/2 cup Green pepper, minced

Optional Sauce
1 cup onions
16 ounce can of Red Gold stewed tomatoes
3 tablespoon Jack Daniels whiskey
1/4 teaspoon nutmeg

Combine beef, pork, oats, onion and green pepper. Mix well. Add beef granules, pepper, allspice and thyme to beaten eggs. Beat again until well mixed. Pour into meat mixture and blend with hands until thoroughly mixed. Place in loaf pan; shape and bake in 350 degree oven for 1 1/2 hours.

Optional Sauce
Pour stock from meat loaf pan into a small saucepan. Add onion and cook until tender, about 5 minutes. Add stewed tomatoes, Jack Daniels and nutmeg. Cover and simmer 15 minutes. Serve over loaf slices.
