Individual Meatloafs Wrapped in Bacon


1 1/2 pound ground beef
1 cup (about 4 ounces) shredded Cheddar cheese
1 egg
1/4 cup dry bread crumbs
1 small onion, chopped (about 1/4 cup)
1/4 cup lemon juice (yes, this is correct)
1/4 cup chopped green (bell) pepper
1/2 cup water (yes, this is also correct)
1/2 teaspoon instant beef bouillon
1 teaspoon salt
6 slices thin sliced bacon, cut in half

These are excellent! And they make *great* meatloaf sandwiches the next day (if they last that long...)

Mix everything except bacon; shape into 6 loaves. Crisscross 2 half bacon slices on each loaf, tucking the ends under. Put loaves on rack in shallow pan and bake uncovered 50 minutes at 350 deg. F.

Serves 6.
