Meatloaf with Pineapple
1 pound ground beef
1/2 pound ground pork (or use all ground beef)
1/3 cup ketchup
1/4 cup chopped onion
1 egg, slightly beaten
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup ketchup
1/4 cup drained crushed pineapple
Combine first 7 ingredients. Form into a loaf (8x4x1-1/2 inch) in shallow baking pan. Bake in 350 oven, 40 minutes. Remove from oven; combine remaining 1/4 cup ketchup with pineapple and spoon over top of loaf. Return loaf to oven; bake an additional 30 minutes. Let meat loaf stand 5 minutes before slicing.
Makes 6 servings.
