Speedy Mousse

1 envelope unflavored gelatin
1/4 cup cold water
1/2 cup orange juice
2 cups sherbet
1/2 cup whipping cream, whipped
Vary the flavor of the mousse by using ingredients on hand. Orange juice with orange, lemon or lime sherbet.
In a blender, sprinkle gelatin over cold water and let stand for a few minutes to soften.
Heat fruit juice to boiling. Pour into blender and process until gelatin is dossolved. Drop sherbet by spoonfuls into blender, blending after each addition.
Using lowest speed, fold in whipped cream into sherbet mixture. Pour into 4 serving dishes and chill about 30 minutes or until set.
