Blue Cornmeal Muffins
1 cup blue cornmeal, or yellow or white
2 cup unbleached white flour
4 tsps baking powder
1/2 tsp salt
1/4 cup sugar
1 cup milk
3 eggs, well beaten
1/4 cup melted butter
Preheat oven to 400F. Mix together the cornmeal, flour, baking powder, salt, and sugar. Combine the milk, eggs, and melted butter. Fold the dry ingredients into the wet until just barely moistened. Spoon into greased muffin tins and bake at 400F for 12-15 minutes, or until lightly browned on top.
Makes 12 very large, or 18 smaller muffins.
