Blueberry Muffins
1 egg
1/4 teaspoon vegetable oil
1/4 teaspoon vanilla extract
250 ml milk
300 g plain flour
1 tablespoon baking powder
1/4 teaspoon salt
125 g sugar
200 g blueberries
Yield: 12 muffins
Preheat the oven to 190 C / 375 F / Gas 5. Grease the muffin tins. Beat the egg. Mix in the oil, vanilla and milk. Set aside. Mix the flour, baking powder, salt and sugar. Add the liquid ingredients to the dry ingredients and mix until smooth. Add the blueberries. Fill the muffin cups half full and bake for 15-20 min., or until golden brown.
