Bran Muffins with Whole Wheat


1 1/2 cup brown sugar
1/2 cup oil
2 eggs
2 cup buttermilk
1 cup water
3 tsp. soda
1/2 tsp. salt
3 cup bran
2 1/2 cup whole wheat flour raisins or blueberries or nuts
(optional, use your imagination)

Mix 1 1/2 cups brown sugar and 1/2 cup oil. Add 2 eggs and mix well. Add 2 cups buttermilk and 1 cup water and mix well. Sift together 3 teaspoons soda, 1/2 teaspoon salt, 3 cups bran and 2 1/2 cups whole wheat flour. Mix together. Bake at 400 degrees for 20 minutes. I add raisins and nuts or blueberries to the batter and they work well. The batter keeps 4 to 5 weeks in the refrigerator, so you can make fresh muffins as you like!
