Bran Muffins
1-3/4 cups all-purpose flour
1 cup milk
3 tablespoons baking powder
1 egg
1/2 teaspoon salt
1/4 cup vegetable oil
1/2 cup sugar
shortening, soft
1 cup bran buds cereal
Stir together flour, baking powder, salt and sugar. Set aside. Measure bran buds and milk into mixing bowl. Stir to combine. Let stand 1 to 2 minutes or until cereal is softened. Add egg and oil. Beat well. Add dry ingredients to cereal mixture, stirring only until combined. Pour batter into 12 greased muffin pan cups. Bake in oven at 400 degrees F. about 25 minutes or until muffins are golden brown. Serve hot.
Yield: 12 muffins.
