Cranberry Muffins 2
3/4 cup Sue Bee Honey
1 cup fresh cranberries, coarsely chopped
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1 egg
1/4 teaspoon grated orange peel
1/2 cup orange juice
1/3 cup melted butter
1/4 chopped nuts
Combine cranberries and 1/4 cup Sue Bee Honey in a small bowl and set aside. Mix all dry ingredients together and form a well in the center. Combine egg, 1/2 cup Sue Bee Honey, orange peel, juice and butter in center of dry ingredients and mix until just moist. Stir in cranberries and nuts. Fill greased muffin tins. Bake at 375 degrees for 15-20 minutes until golden brown or until a toothpick inserted comes out clean. Makes 12 muffins. Serve warm with Sue Bee Honey Butter.

1/2 cup margarine or butter
