Low Fat Kiwi Almond Muffins

2 1/2 cups all purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 1/4 cup low-fat buttermilk
1/2 teaspoon salt
1/2 cup egg beaters
2 tablespoon vanilla extract
4 kiwi fruits (peeled & cut into pieces)
2 tablespoon applesauce

Topping
2 tablespoon all purpose flour
1/4 cup almonds (chopped)
1 tablespoon reduced cal. tub margarine (melted)
1 tablespoon packed brown sugar

Preheat oven to 400 degrees. Spray muffin pan with cooking spray and set aside. In a large bowl mix the dry ingredients (flour through salt) and make a well in the middle. In a separate bowl mix the milk, extract, egg beaters and applesauce. Add the milk mixture to the flour to moisten. Fold in the kiwi. Fill each muffin pan > full. Topping: Mix flour, almonds and brown sugar. Add margarine to moisten. Sprinkle over each muffin. Bake in oven 20 to 25 minutes or until golden brown. Let cool.

Makes 18 muffins; serving size: 1 muffin
