New York Apple Muffins


2 cup flour
3/4 cup brown sugar
1/2 cup sugar
2 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. cloves
1/8 tsp. nutmeg
1/2 cup chopped walnuts
2 cup apples, coarsely chopped (Cortland, McIntosh, Pippin)
1/2 cup raisins
3 eggs
1/2 cup butter, melted
4 oz. cream cheese, cut into small pieces
1/2 tsp. vanilla

Topping:
1/2 cup walnuts
1/2 cup brown sugar
1/4 cup flour
1 tsp. cinnamon
1 tsp. lemon peel, grated
1 oz. butter, melted

Preheat oven to 375 degrees. Combine flour, salt, spices and baking soda. Set aside. Combine apples, raisins, walnuts, eggs, cream cheese, butter and vanilla. Add dry ingredients, a little at a time to the apple mixture. Portion batter into muffin papers. Combine all topping ingredients, sprinkle on batter. Bake for 20 to 30 minutes.

Makes 24 muffins.
