Oatmeal Muffins 2
1 cup flour
1/4 cups granulated sugar
3 teaspoons baking powder
1/2 teaspoons salt
1 cup quick-cooking oatmeal (NOT instant)
1 egg, slightly beaten
1 cup milk
3 tablespoons vegetable oil
Preheat oven to 425F. Grease 12 muffin tins with shortening. Sift together flour, sugar, baking powder, and salt. Add oatmeal, stir to mix. Mix in egg, milk, and oil, stirring only to moisten. Fill 12 muffin tins and bake for 15 minutes or until lightly golden brown on top.
