Orange, Chocolate and Cinnamon Muffins

125 g (5 oz) plain flour
7.5 ml (1.5 tsp.) baking powder
1 egg
50 g (2 oz) caster sugar
125 ml (5 fl oz) milk
50 g (2 oz) melted butter
Grated rind of 1 orange
50 g (2 oz) chocolate chips
2.5 ml (0.5 tsp.) cinnamon
25 g (1 oz) cocoa powder
2 x 12 cup mini muffin tray and paper cases
Muffins are an American tradition which make a change for breakfast. Sift the flour and baking powder together into a bowl. Then stir in remaining ingredients mixing thoroughly. Carefully spoon mixture into each muffin cup. Bake: Fan oven 180:C Conventional electric oven preheat 200:C shelves 2 and 4 Gas oven preheat Mark 5 shelves 2 and 4 for 10-15 minutes.
