Sweet Potato Raisin Muffins
1 3/4 cups whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
2 egg whites
2 tablespoon brown sugar
1/4 cup unsweetened applesauce
1/4 cup evaporated skim milk
2 med. sweet potatoes baked you need 1/4 cup pulp, mashed
1 tablespoon finely chopped lemon zest
2 tablespoon lemon juice
1/2 cup raisins
Preheat oven 350:. Line muffin tins with liners or spray with cooking spray. In a large bowl, whisk the flour, baking powder, baking soda and cinnamon until well combined. Add the liquids all at once to the dry ingredients and stir until just combined. Spoon batter into muffin cups, each should be nearly full and well rounded. Bake for 25 minutes or until golden brown. Turn the muffins out onto a rack to cool.
