Treasure Bran Muffins


1 1/4 cups bran cereal
1 cup milk
1/4 cup oil
1 egg
1 1/4 cup flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup raisins

1 8-oz. pkg. Cream Cheese
1/4 cup sugar
1 egg

Combine cereal and milk; let stand for 2 minutes. Add the egg and the oil. Mix well. Combine the dry ingredients and mix with the first mixture. Fold in the raisins. Spoon into greased and floured medium-sized muffin cups. Fill each about 2/3 full. Combine softened cream cheese, sugar and egg; mix until well blended. Drop rounded tablespoons of the cream cheese mixture onto batter in each cup. Bake at 375 degrees for 25 minutes.

Makes 1 dozen.

I would guess that the cream cheese mixture could be dropped into other muffin batters also.
