Angel Hair Pasta with Oyster Mushrooms
This is one of those "trick" recipes that tastes like a gourmet dish you've spent hours preparing, but it takes about 15 minutes. Fresh oyster mushrooms are especially good with this recipe because they impart a hint of shellfish flavor. Like most pasta dishes, it's improved tremendously when served with a fresh tossed green salad and crusty bread.
1 10-ounce box Angel Hair Pasta
1-1/2 cups Oyster Mushrooms, fresh, sliced
1 Onion, medium, chopped
1 tablespoon Extra-Virgin Olive Oil
3-oz. pkg. Cream Cheese, cut into cubes (or low-fat substitute)
2 cloves Garlic, fresh, chopped
1 tsp. Basil, fresh, chopped
1/8 tsp. Salt
1/8 tsp. Black Pepper, coarsely ground
1/3 cup Milk, fat-free (or soy substitute)
2 tablespoon Chives, fresh, snipped
Cook the Pasta according to the directions on the package. Meanwhile, heat the Olive Oil in a saucepan over medium heat. Add the Oyster Mushrooms, Onion and Garlic, and cook about 5 min. or until tender. Add the Cream Cheese (or substitute), Salt and Pepper. Cook and stir over low heat until the cheese is melted. Stir in the Milk (or substitute) and add the Basil and Chives. Heat for 5 min. and pour directly on top of the hot pasta. Toss to coat, plate with a few chives on top, and serve immediately.
