Low Fat Party Fare Pistachio Pasta
Makes 8 servings
1 minced garlic clove
1/4 cup chopped onion
1/2 cup pistachio nuts, shelled, coarsely chopped
1/4 cup chopped whole black olive
1/4 cup minced fresh parsley
1 teaspoon lemon juice
1/8 teaspoon dried basil, crushed
1/8 teaspoon black pepper, ground
8 ounces spaghetti, cooked, drained
1/3 cup grated Parmesan cheese
Sauté garlic and onion in water or broth until onion is tender. Add remaining ingredients except cheese. Toss together; heat 2 minutes. Toss with Parmesan cheese.
