Pasta with Smoked Salmon, Vodka and Dill


1/4 cup butter
1-1/2 cups whipping cream
2 tablespoon vodka, optional
8 oz smoked salmon, diced
1/2 tsp salt, or to taste
1/2 tsp pepper
2 tablespoon chopped fresh dill
3/4 lb fettuccine pasta or any broad noodle pasta
1/2 cup grated parmesan cheese, optional

Melt butter in a large deep frying pan. Add whipped cream and gently bring to a boil. Add vodka, reduce heat and simmer for 3 to 4 minutes or until sauce thickens slightly. Add smoked salmon, salt, pepper and dill. Remove from heat. Cook fettuccine until tender, drain well. Reheat sauce. Add pasta and toss gently over low heat until sauce is thick and creamy. Taste and adjust seasonings. Sprinkle with cheese, if desired.

Makes 4 to 6 servings.
