Pungent Sesame Noodles
3 oz. fettuccine noodles
1/4 cup sliced scallions
3 tablespoon chopped Italian parsley
3 tablespoon reduced sodium soy sauce
3 tablespoon finely julienned orange rind
1 tablespoon + 1 tsp. rice wine
2 tsp. granulated sugar
2 tsp. dark Oriental sesame oil
2 tsp. rice wine vinegar or cider vinegar
2 tsp. olive oil
1/4 tsp. crushed red pepper flakes
In a large pot of boiling water, cook fettuccine 10 to 12 minutes, until al dente; drain in colander. In medium bowl, combine noodles with remaining ingredients; toss to coat. This may be served hot or cold.
Makes 4 servings, 140 calories per serving (1/2 cup per serving).
