Shrimp Scampi Over Angel Hair Pasta
1 pound medium fresh shrimp, unpeeled
8 ounces angel hair pasta, uncooked
1/2 cup butter or margarine
4 cloves garlic, minced
1/3 cup dry white wine
1/4 teaspoon freshly ground pepper
3/4 cup grated Romano cheese
1 tablespoon fresh parsley, chopped
Serving Size : 4
Peel shrimp and devein, if desired; set aside. Cook pasta according to package directions; drain. Place on a large serving platter; and set aside. Melt butter in a large skillet over medium heat. Add garlic and shrimp, and cook, stirring constantly, 3 to 5 minutes or until shrimp turn pink; add wine and pepper. Bring to a boil; cook 30 seconds, stirring constantly. Pour shrimp mixture over pasta; sprinkle with cheese and parsley and toss gently. Serve immediately.
